Rice Soup


Have you heard of rice soup? Well, here it is, I knew it is unusual but believe me it is a delicious.

Ingredients for 5 servings
3 cloves garlic
1 onion
1/4 kilo chicken
1/2 cup rice
10 cups water
salt and pepper to taste
1 carrot ( diced)
spring onion for garnishing

Procedure:
1. Saute the garlic and onion then add the chicken and saute until pinkish color is gone.
2. Add the rice, salt and pepper then simmer for a minute.
3. Add water and bring to boil, stirring occasionally to avoid the rice from sticking at the bottom of the pot.Let simmer until the rice are so tender. Add water if necessary.
4.  Add the carrots and simmer until done.
5. Sprinkle with spring onion then serve.

If you love ground pepper, you can add more it is yummier.

Corned Beef with Potato

 Sometimes I craved for this, because when I was young we always have this once a week, because during that time we do not refrigerator so most of our food are in canned and one of it is corned beef. I love it when our nanny cooked it with potato and beaten eggs like this.

Ingredients:
1 can corned beef
2 potatoes
2 beaten eggs
1 onion
2 cloves garlic

Procedure:
1. Saute the garlic and onion then add the corned beef and simmer for 2 minutes.
2. Add the potatoes then simmer , then add salt and pepper to taste then simmer until cooked.
3. Add the beaten eggs and simmer until cooked.
4. Turn off the heat then serve.

Braised Liempo


Simple pork dish that you can easily follow, so do not be scared to try this recipe. I guarantee, you won't go wrong. Enjoy cooking!

Ingredients for 4 servings
1/2 kilo liempo ( cut like pork chops)
4 cloves garlic
1/2 cup soy sauce
1/4 cup lemon or calamansi juice
1/2 cup water
1/4 teaspoon ground pepper
salt to taste

Procedure:
1. Saute the garlic until brownish then add the liempo and braised for few minutes over high heat until pinkish color is gone.
2. Add the soy sauce, lemon juice and ground pepper then continue to braise until the pork soaked the soy sauce color.
3. Add the water and allow to simmer until meat is tender. Once tender increase the heat to high and simmer until the sauce thickens, add salt if necessary.
5. Turn off the heat then serve.

Bagnet


Bagnet is a popular pork chicharon from Ilocos regions of Philippines. Ilocanos loved to put this in their pakbet or eat it with vinegar and garlic as a dipping sauce. Personally I like this dish of course in moderation.Will you try to cook this? Let me know.:-)

Ingredients:
1/2 kilo pork belly
1/2 litre water
Salt to taste
oil for deep frying

Procedure:
1. Hang the pork belly to dry then cut to your desired size.In a pot boil the pork with water and salt for 15 minutes over medium heat, then remove the pork and deep fry until brownish then remove from oil and sprinkle with water, then put back in oil and continue frying until golden brown.
2. Remove and let cool then serve.

Sotanghon with pork strips


I cooked this as simple as it can be, because a friend requested this so that she can follow because she said she has no experience in cooking cellophane noodles or sotanghon. So I hope from this she will have courage to try this very simple yet yummy recipe.

Ingredients for 4 servings
1/4 kilo sotanghon
1/4 kilo pork cut into strips
3 tablespoons soy sauce ( you may add if you want a darker color)
7 cups water
1 onion
3 cloves garlic
100 grams cabbage
salt and pepper to taste

Procedure:
1. Saute the garlic and onion, then put the pork and saute until pinkish color is gone.
2.  Then add the soy sauce and simmer for few minutes.
3. Add the water and allow to boil, then add the sotanghon,  salt and pepper to taste and simmer until sotanghon is almost cook.
4. Add the cabbage then simmer until done.
5. Serve hot.

Raisins Cookies

A delicious cookies with raisins to munch on, if you love raisins you must try this simple to bake cookies.

Ingredients:
2 cups flour
3/4 cup white sugar
1 cup butter ( melted)
1 teaspoon baking powder
1 cup raisins

Procedure:
1. Sift all the dry ingredients except for the chopped raisins
2. Combine the sifted dry ingredients, raisins and butter, then mix well using your hands.
3. Continue mixing until you form a ball of dough, then spoon a portion  and arrange in a greased baking tray.
4. Preheat the oven to 170 degree Celcius then bake the cookies for 15 minutes or until done.
5. Let cool and keep in an air tight container and serve anytime you want it. :-)

Ginataang gulay na may pritong Galunggong


I love vegetables so much, all vegetables no matter what the taste. One way of cooking vegetables to make it taste better is to cook it with coconut milk. Really yummy!

Ingredients for 4-5 servings
250 grams galunggong ( cleaned and fried)
250 grams squash
250 grams eggplant
1 sayote
6 okra pods
1 bunch of kangkong or any green leaves vegetables of your choice
5 cups coconut milk
onion
ginger
salt to taste

Procedure:
1. In a pot put the ginger, fried fish  and 4 cups coconut milk then bring to a boil.
2. Add the squash then simmer until almost half cooked then add the sayote, eggplant and okra then simmer and add the green leafy vegetables, simmer until almost done.
3. Add the 1 cup of coconut milk, salt to taste then simmer until cooked.
4. Serve it hot.
