Paksiw na may gatas


Out of my curiosity, I cooked this Paksiw with milk and it's delicious! Try it.

 Ingredients:

1/2 kilo fish
thumb size ginger (sliced)
3 cloves garlic ( crushed)
3/4 cup vinegar
1 cup evaporated  milk
salt and pepper to taste
Spring onion 

Procedure:
1. In a cooking pot put the vinegar, all the spices and fish cover and bring to a boil.
2. Let simmer until it is fully cooked.
3. Add the milk, salt and pepper to taste, then simmer until done.
4. Garnish with spring onion then serve hot with rice.

Rice with Wingette




I made this today for lunch, this is very easy to make and here is the recipe.

Ingredients for 5 servings:
5 cups leftover rice or steamed rice 
1/2 kilo wingette
2 cloves garlic (crushed)
1 cup tomato sauce
5 pieces hard bolied egg ( sliced into wedges)
1/2 cup green peas
1/2 cup raisins
salt and pepper to taste


Procedure:
1. Saute the garlic then add the wingettes, stirring until the pinkish color is gone, then add the tomato sauce, salt and pepper, simmer until the chicken is cooked.
2. Add the rice and stir until evenly mixed, stir every now and then until almost done then add the raisins and green peas, stir until done.
3. Serve by topping it with egg wedges and enjoy.


Wingette is the middle part of the chicken wings, I like this part a lot :-)

Garlic Shrimp and Crabstick

Simple and very easy to prepare less than 10 minutes cooking time :-).

Ingredients:
250 grams shrimps ( de-shelled but left the tail)
8 pieces crabsticks
3 cloves garlic (minced)
salt and pepper to taste

Procedure:
1. Saute the garlic then add the shrimps and stir until changed in color (orangey).
2. Add the crabstick, salt and pepper to taste then stir for a minute or two then turn off the heat.
3. Put in a serving plate sprinkle with some toasted garlic and sliced spring onion. Enjoy!

Fried Rice with Tomato Sauce

 A brightly colored fried rice loaded with flavors and love:D.

Ingredients for 5 servings:
5 cups cooked rice
2 pieces pepperoni or chorizo
2 carrots ( sliced to your desired size)
2 cloves garlic (minced)
1 cup frozen peas
1/4 cup tomato sauce
salt and pepper to taste
any leftover meat that you want to add ( this is optional) I added my leftover grilled chicken


Procedure:
1. Saute the garlic then add the tomato sauce and stir and simmer for few seconds then add the pepperoni and carrots, simmer for a minute. If you will add a leftover meat you can add it.
2. Add the rice then give a good stir, continue stirring until almost done.
3. Sprinkle with salt and pepper to taste, then add the green peas and stir for a minute and turn off the heat.
4. Serve with love and enjoy or decorate it first by topping it with spring onion and hard boiled eggs :-).

How To Make an Easy Dessert


Simple yet delicious and very easy to prepare. Affordable and enough for the whole family.

Ingredients for 15 servings:
500 grams white small sago (cooked and drained)
1 sachet green gelatine powdered (unflavored)
1 sachet red gelatine powder ( unflavored)
2 cans condensed milk or  add according to your taste
2 cups fresh milk or evaporated milk
1 litre All purpose cream(Nestle, Alaska, Magnolia, Etc)

Procedure:
1. Cook each gelatine then set aside and diced.
2. In a mixing bowl combine all the ingredients then mix well.
3. Refrigerate before serving.



I recooked today (August 1) for a friends birthday and everybody likes it. I used green and orange gelatin



I dropped some raisins to my bowl and it's superb!

Green Beans Delight


Crunchy green beans loaded with my favorite chicken and shrimps, very rich in flavor, mmmmm :).

Ingredients:
1/2 kilo green beans/ Baguio beans
150 grams chicken breast (cut to your desired size)
150 grams shrimps ( de-shelled)
3 gloves garlic
2 tablespoons soy sauce
Salt and pepper to taste

Procedure:
1. Saute garlic then add the chicken and saute until brownish then add the soy sauce and shrimps and stir for 30 seconds.
2. Increase the heat then add the green beans and stir until almost done, add salt and pepper to taste then continue to stir until done.
3. Serve with love :-).

Macaroni Sago Salad


I am spending time with my nephews and nieces for few weeks now and I am happy preparing their after school snacks, and since they loved colorful ingredients, I've decided to put colored sago in one of their favorite macaroni salad. Oh they loved it so much!

Ingredients for 18 servings:

1/2 kilo elbow macaroni (cook according to its packaging procedure)
1 cup colored sago ( cooked then drained)
836 grams fruit cocktail
300 grams All purpose cream ( Nestle or any brand)
220 ml Mayonaise
1 ( 390 ml) can condensed milk ( add if you want the taste sweeter)
1 (370 ml) can evaporated milk

Procedure:

1. Combine all the ingredients then refrigerate for few hours.
2. Serve with a smile :-).

Bangus Adosiw



You must try this recipe so that you will not miss half of your life :-). This is a combination of Paksiw and Adobo that's why it is very delicious. I cooked this for our lunch.

Ingredients:
1 kilo milkfish (sliced and cleaned)
1/2 cup vinegar
1/4 cup soy sauce
thumb size ginger
1/2 cup water
3 cloves garlic (crushed)
1 onion
2 pieces laurel/bayleaf
1/2 teaspoon crushed black pepper
chili finger (siling haba)
salt to taste


Procedure:

1. In a pan or wok put the ginger, chili, onion and garlic then the fish, vinegar, soy sauce, salt, black pepper and laurel, cover and cook over medium heat, when boiling, lower the heat then simmer until half cooked.

2. Add the water and continue cooking until done.
3. Serve with rice and enjoy.

Ginisang Buko at Malunggay




A combination of two nutritious ingredients that will surely satisfy your hunger.

Ingredients for 3 servings:
2 buko ( scraped)
1 cup malunggay leaves
2 cups buko water
2 cloves garlic (minced)
2 stalks spring onion
salt and pepper to taste

Procedure:
1. Saute the garlic then add the buko meat and stir for 2 minutes.
2. Add the buko water and bring to a boil, then simmer for 3 minutes.
3. Add salt and pepper to taste then simmer for a minute and add the malunggay and spring onion, stir well then turn off the heat.
4. Serve it hot.

Beanstek


A delicious string beans dish that's cooked like Bistek. Yummier than adobong sitaw, try it.

Ingredients:
2 bunches string beans
1 onion ( cut into rings)
2 cloves garlic
1/4 cup soy sauce
2 tablespoons calamansi or lemon juice
salt and pepper to taste
string beans
Procedure:
1. Saute the garlic then add the onion ( remove some onion slices to to garnish when serving)
2. Add the chicken and stir until pinkish color is gone, add the beans and give a good stir until half cooked.
3. Add the rest of the ingredients and stir well then simmer until done.
4. Put the reserve onion rings then serve.

Ginisang Buko

A must try recipe!

Ingredients for 3 servings:
2 cups young coconut meat (buko)
12 pieces shrimps
2 cloves garlic
1/2 onion
salt and pepper to taste
buko/young coconut

Procedure:
1. Saute the garlic and onion then add the shrimps and saute until the color is pinkish.
2 Add the coconut meat, salt and pepper then stir for 2 minutes or until done.
3. Serve it hot.

Mely's Kitchen Banana Delight


Yummy! The best for your parties or special gatherings, this is also budget friendly.

Ingredients for 8-10 servings:
3/4 kilo sliced banana ( you can use lakatan, cavendish, latondan)
1/2 cup condensed milk or according to your taste
1 1/2 cup Nestle Cream
1 cup chocolate coco crunch
1/2 cup corn kernel
some chocolate coated wafer

Procedure:
1. Combine the milk and cream then add the sliced banana, and mix well.
2. Cover and refrigerate for few hours, decorate with corn kernel, coco crunch, chocolate wafer, or anything you want to use for decoration then serve.

Crab Sticks Rolls

I love crab sticks in sushi, but I love it more with this recipe that I invented, one Friday afternoon, succulent and crispy in every bite. You will surely ask for more.

Ingredients for 4 servings:
12 crab sticks
12 spring roll wrappers or if using big only 6 and cut into halves
1/4 kilo ground beef or pork
1 carrot ( minced)
1 small onion (minced)
salt and pepper to taste


Crab sticks


Procedure:
1. Mix the ground meat, carrots, onion, salt and pepper, then divide into 12 portions.
2 Spread the ground meat mixture on the wrapper then top the crab sticks, wrap well and sealed the wrapper with water or beaten egg.


3. Deep fry until golden brown and put in a paper towel to remove excess oil.
4 Slice and serve it hot.

Mely's Kitchen Ensalada

This salad is a very good appetizer, the diverse flavors from all the ingredients blended well, making this salad so appealing to your taste buds. Try this and let me know.

Ingredients:
1 mango ( not too ripe) (sliced into strips)
1 cucumber (sliced into strips)
2 tomatoes ( sliced into strips)
1 small bitter melon (ampalaya)
2 tablespoons soy sauce
1 tablespoons vinegar
pinch of sugar


Sliced ingredients
 Procedure:
1. In a mixing bowl combine all the ingredients and mix well.
2 Serve with fried fish or meat and enjoy.

Graham Peanut Ball


I never thought that what I imagined, turned into a delicious chocolatey and nutty sweet treat that is so addicting in every bite. This is very easy to prepare, I hope that you will try this recipe and let me know about it.

Ingredients:
1 1/2 cup graham biscuit powder
1/2 cup peanut  powder ( you can use a blender for this)
1/2 cup condensed milk (add if needed)
1 tablespoon melted butter

Procedure:
1. Combine all the ingredients until it forms a ball with a dough-like texture.

 If the mixture is too dry, add a little condensed milk.
2. Form into balls then roll over the crumbled or powdered peanuts then serve or you can wrap it with water cellophane like yema and store in an air tight jar and serve anytime you want it.


If Graham cracker is not available you can replace it with this or any biscuit the same with Graham.

Tutti Frutti Salad



A delicious salad that I've created for my friends who visited me last week. They loved it and asked for the recipe.

Ingredients
1 cup corn kernel
1 cup pineapple tidbits
1 big apple (sliced into tidbits)
1/2 cup raisins
2 cups Nestle Cream
1 cup condensed milk
1 can fruit cocktail ( 15 0z.) drained
3 different colored gelatine ( cooked according to its packaging procedure) 12 grams each pack

Procedure:
1. Cut the gelatine into cubes. (if you do not want to use gelatine you could replace it with nata de coco or kaong)

2. Combine all the ingredients then mix well.
3. Refrigerate before serving.

Eggplant Sisig


Sisig is a popular Filipino dish made of pork cheeks, liver etc, and I love sisig, but can we cook it  using eggplant to replace the pork cheeks and ears? Well, it can be and here is the evidence, you must try this recipe that I invented ( July 18, 2013). Eggplant sisig is the best. Try it.


Ingredients for 3 servings:
250 grams Eggplant
100 grams pork liver
25 grams bell pepper
1 onion
3 cloves garlic
3 tablespoons lemon or calamansi juice
5 tablespoons soy sauce
1/4 cup water
1 egg

Procedure:
1. Slice the eggplant, liver, onion, bell pepper into dice.
2. Saute the garlic and onion then add the liver and bell pepper then simmer for a minute.
3. Add the eggplant, soy sauce and lemon juice then simmer until soften.




4. Add the water then simmer until done, then sprinkle with spring onion, crack the egg then serve.

Salmon with Spinach


No oil and loaded with zinc from spinach and protein from salmon what more could you ask for? Try this healthy salmon recipe and enjoy your food.

Ingredients:
400 grams salmon
1 tomato
3 stalks spring onion
1 teaspoon ginger extract( shred the ginger then extract the juice)
3 cups spinach
1 1/2 cups water
salt
pepper

Procedure:
1. Slice the tomato and put in a pot, then the fish, put the white part of the spring onion, ginger extract, salt and pepper, cover over low heat and allow to boil and simmer until the fish produce its own juice.
2. After few minutes of simmering the fish in its own juice, increase the heat and add the water then bring to boil.
3. Once boiling finalize the taste then add the spinach and spring onion, simmer until cooked.
4. Serve it hot and enjoy.

Fried Tilapia Bistek Style


Bored of just fried tilapia? Add a spice to it and turn it into a more delicious dish by having a little twist with it. Chop some onion squeezed a lemon and if bitter melon is available add some, pronto! a new delicious dish is ready to be served. Enjoy!

Ingredients:
3 fried Tilapia
2 onions ( sliced into rings)
1 bitter melon
1/4 cup lemon juice or calamansi
1/2 cup soy sauce
2 cups water
ground pepper ( optional)


Procedure:
1. Saute the onion then add the bitter melon after 2 minutes remove it all and set aside.
2. Pour in the water, soy sauce, ground pepper and lemon juice then let boil, add some sauteed onion and simmer for few minutes.
3. Add the fried tilapia and simmer allowing the fish to be soften, then add the sauteed onion and bitter melon.
4. Simmer for a minute and turn the heat off.
5. Serve it hot.

Fried Chicken with Powdered Milk


When I cooked this, there were lots of powdered milk in the cabinet, an idea came out "what if I will put this on fried chicken?" I tried and it is just fine. Wanna try? Here is the recipe for it.

Ingredients:
1 whole chicken cut into serving sizes
1 1/2 cups flour
1/2 cup powdered milk
1/4 cup soy sauce
4 tablespoons lime or calamansi juice
1 beaten egg
salt and pepper 

Procedure:
1. Marinate the chicken with lime juice, soy sauce and put salt and pepper as needed. 
2. Prepare the breading by combining the flour and powdered milk.
3. Remove the chicken from the marinating sauce then pour in the beaten egg and mix well so that the breading mixture will stick well.
4. Roll over the chicken in the breading and deep fry in a hot oil until golden brown.
5. Serve it hot. 

Tips for frying: Make sure that the oil is hot, when the chicken is already brownish reduce the heat to low allowing the chicken to be cooked evenly, do not make the heat so high because it will make the chicken almost burnt outside but raw inside.
