Are you on a diet? This one is for you, a leche flan without an egg, less calories, but still taste the same. One good thing also is we do not need to steam it. Enjoy!
Ingredients for 5 servings:
1 cup condensed milk
1 1/2 cup evaporated milk
2 tablespoons unflavored gelatine powder ( either yellow or white)
2 tablespoons sugar
1/2 cup hot water
Procedure:
1. Put the sugar in a molder then melt it and set aside. No need to put water.
2. Dissolve the gelatine powder in hot water then set aside.
3. Mix the condensed and evaporated milk, then put in a pot over medium heat stirring constantly, when it is already hot, add the gelatine mixture, then wait until it simmers, simmer for 2 minutes. Turn off the heat. Pour in the pan molder then refrigerate until it is firm.
4. When it is already firm, run a knife in the edges so that we can remove it easily from the molder. Put a plate on top, turn it upside down then loosen. Slice before serving.
Note: Follow the exact measurement for a good result. Gelatine powder should be exact in measure if you put too much it's not good.
What if we don't include the sugar, will it turn out good as well? Condensed milk is enough to make it sweet. Thanks!

ReplyDeleteI havent tried agar, because it is not available in my place, but if it is available I will use it over gelatine.
DeleteIf you will use agar, instead of dissolving it in hot water you need to boil it for few minutes, or else it wont work, because agar has a high setting point compare to gelatine that is why you need to boil it for it to be fully dissolved.

Deletehow much water will we use in cooking agar? how much of agar will be needed for your/this recipe? is it OK . . . instead of 1 1/2 cup evap, i'll use 1 cup evap and 1/2 cup heavy cream?
ReplyDeleteI have not tried this with agar, so I am not sure really but I recommend , just follow the same ingredients but just replace the gelatine powder with agar, I am not sure also about the heavy cream, im so sorry because I dont recommend things that I havent tried or experience with the result in using certain ingredients. But I admire your creativity, go for it and let me know.

Leche Flan has been and always my favorite dessert but with the amount of egg yolks i've decided to ditch for quite sometime now. It was a disaster when I made it..it says in the instruction that you have to dissolve the gelatin powder in hot water and set aside..it hardened when I made it and can't mix it with the milk mixture..what did I do wrong? Please reply..I really want to make this for my daughter who has egg allergies..thanks
ReplyDeleteIt doesnt matter if it's like that, when you drop it in hot milk it will still be dissolve , Your gelatine is so strong but its ok, if its like that just put on the milk mixture and wait until it is fully dissolve or melted, once it is boiling lower the heat to simmer it for 2 minutes you will see the gelatine will be dissolve so dont be scared about it being hardened.

ReplyDeleteI tried making this recipe but since my children loved egg so I tried by adding 2 whole eggs when the gelatin has been dissolved. but after 2 hours inside the fridge, still its not firming. Do you think its because of eggs?
yes it's because of the egg, its not eggless anymore since you put 2 eggs , the eggs are raw thats why it can't be hardened.

DeleteI tried the recipe, the consistency and taste is almost the same as the original, although we still crave the creamier and richness of original flavor. this is a nice recipe to try as a healthy alternative. kudos Ms. Mely!
ReplyDeleteI would add a package of cream cheese for creaminess, in addition to all of the ingredients, as Flan Napolitano has, or maybe dissolve 2 tsps of cornstarch, which also helps with creaminess.
